In my opinion, the construction and material of the the knife is the most crucial element. I can't tell you how many times that I've skimped on quality for price, just to have my cheap knife break only a few weeks after buying it.
A good knife should be comprised of a “one piece” construction, meaning the blade should extend all the way through the handle. This is also known as the “tang”.
It's also important that your knife can withstand the elements. I primarily fish in the saltwater, so a knife that rusts easily just won't work for me.
The material of the blade is another important aspect! Regardless if you fish freshwater or saltwater, the blade should be made of a non-corrosive material such as stainless steel.
The length of the blade is also important, which is why the knife should come in a variety of lengths. You don't want to try filleting a 100 pound tuna with a 7” blade more suitable for filleting flounder. You also shouldn't have to buy a different brand of knife to meet your different size requirements.
Probably one of the most crucial, yet overlooked components of a great fillet knife is the handle. You want a knife that has an ergonomic handle that fits comfortably in your hand. It should also be made of some type of non slip material, such as rubber. Believe me, the last thing you want after a successful day on the water is a trip to the emergency room to get stitches.

The Bubba Blade also keeps it's edge really well! In fact, I've only had to sharpen my Bubba Blade a few times since I bought it several years ago.
